Liver, kidneys, intestines, bowels, stomachs, in short all kinds of offal are still regularly on the menu. Not just raw, these small freshwater shrimps are eaten alive! Served in a bowl with a mix of spices and herbs like garlic, lemon grass, lemon juice and onion, with a plate on top otherwise they'd jump out.  The shrimps wriggle in your mouth which is said to be part of the attraction.
