Anchan Flower (ดอกอัญขัญ)

The Anchan or Butterfly Pea flower grows everywhere in Thailand and because it's blue it's used to colour Thai drinks and desserts. The flower is also eaten raw, serving as one of the vegetables of a meal. A bit of a strange idea, but it tastes well and the flower is supposed to prevent a whole series of health problems like poor memory and stress-related illnesses.

That is very interesting that they serve Anchan or Butterfly Pea flowers as vegetables with meals at Thai restaurants. Having something like that is very interesting and is not something that I would expect to be served with a mean. It is cool though that they also use these flowers to color drinks and desserts. Since it does grow everywhere there in Thailand, they might as well use it.
